You begin in Delhi, where the Mughal legacy still defines the city's cooking. A guided walk through Old Delhi and Chandni Chowk introduces the kebab houses, paratha lanes and centuries-old sweet shops that shaped North Indian food as the world knows it. From there the journey moves to Jaipur, where a Rajput family opens their home for a hands-on cooking session covering the dishes at the core of the regional repertoire, from dal baati churma to gatte ki sabzi and ker sangri, the desert bean and berry preparation that defines Marwari cooking.

Jodhpur delivers the tour's most vivid street-level experiences. The lanes around the Clock Tower and Sardar Market are among the finest eating streets in India, home to mirchi bada, mawa kachori and pyaaj kachori, and your guide leads you through them with an understanding of which stall does what best and why. A royal cooking demonstration introduces laal maas, the fiery Mathania chilli mutton dish created for Rajput hunting parties, and safed maas, its subtle white counterpart.

Udaipur closes the trail on a gentler note, with lakeside dining, a spice market walk and a session on Mewari sweets and thali composition. FAQ

Is Indian street food safe for international travellers?
On our guided food walks, yes. We work only with long-established vendors who cook fresh to order at high heat, maintain high turnover and are personally known to our guides. We avoid raw salads, uncooked chutneys and cut fruit at street level, and bottled water is provided throughout.
How spicy is Rajasthani food, and can it be adjusted?
Rajasthani cuisine uses Mathania chillies generously, and dishes such as laal maas are genuinely fiery. All cooking sessions and restaurant meals can be prepared at reduced heat on request, and your guide will advise which street items are mild. Please share your spice tolerance at the time of booking.
Can vegetarian, vegan and Jain travellers do this tour?
Very comfortably. Rajasthan has one of the world's richest vegetarian traditions, and much of the classic repertoire including dal baati churma, gatte ki sabzi and ker sangri is naturally vegetarian. Vegan and Jain versions, which omit dairy and root vegetables respectively, are prepared regularly and require only advance notice.
What do the hands-on cooking classes involve?
Sessions run for approximately three to four hours in a family home or heritage kitchen. You prepare four to six dishes yourself under guidance, learn spice blending and tempering techniques, and share the meal afterwards with your hosts. Printed recipes adapted for ingredients available at home are provided.
Can I buy spices and cookware to take home?
Yes, and market visits are built into the itinerary for exactly this reason. Whole spices, dried ker sangri, asafoetida and stone mortars all travel well. Your guide will advise on quality, fair pricing and any customs restrictions that apply to your country of residence.
Is alcohol available during this tour?
Yes. Rajasthan permits alcohol service in licensed hotels and restaurants, and several heritage properties produce their own royal-recipe liqueurs such as kesar kasturi and jagmohan. Alcoholic drinks are not included in the package price and are settled directly.
